Lauki Ki Barfi

Make this Festive Season, much more interesting not only by preparing but also by consuming this Scrumptious Indian Sweet with fresh Bottle-Gourd, Loads of Full-Cream Milk, Khoya , Sugar ,Nuts…. flavored with Green Cardamom Powder Skip applying the Silver Leaf if you are consuming it for fasting.

 

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Serves: 4

Ingredients and Quantity:

Bottle Gourd, grated -01 medium-sized

Full-Cream Milk – 02 cups

Khoya, grated- 1 1/2 cups

Sugar- 1/4th  cup

Pistachio nuts , slivered – 1/4th tbsp..

Almonds, slivered- 1/4th cup

Green cardamom powder- ½ tsp.

For the greasing of the steel tray:

Desi Ghee –As required for greasing

For the Sprinkling:

Green cardamom powder- ¼ th tsp.

For the Garnish:

Silver Leaf- 01 sheet (Optional)

Pistachio nuts , slivered – 1/4th tbsp..

Almonds, slivered- 1/4th cup

Method:

Peel the bottle gourd, cut into half, remove and discard the seeds, wash and grate.

Place the grated Bottle gourd in water to prevent it from becoming brown in colour (Enzymatic Browning)

Squeeze out the entire water from the grated bottle gourd.

Grease a steel tray with sufficient desi ghee.

Boil milk in a heavy- bottomed deep non-stick pan.

Add grated bottle gourd and mix.

Add the green cardamom powder.

Add the grated khoya, slivered nuts and sugar.

Mix well and cook for 10 minutes on a medium flame.

Let the milk get absorbed / evaporated, ensuring that it is of a semi-thick consistency.

Remove from the flame, pour into the greased tray and spread evenly.

Sprinkle cardamom powder and apply silver leaf (Optional).

Sprinkle the remaining slivered nuts and set aside for an hour.

Cut into desired shapes and serve.

Chef Tips:

You may add more dry fruits of your choice, if desired.
